On April 1st of 2015, tucked away in the foothills of a small mountain town, a local family embarked on a Mac and Cheese adventure. Mac Nation Cafe in Indian Hills, Colorado is home to over 50 varieties of Mac and Cheese dishes. A state themed menu featuring a long list of ingredients piled high on top of their signature homemade Mac & Cheese. Each dish named after a state and representing a piece of that states unique cuisine. Comfort food at its best and literally, something for everyone.
The flagship cafe has an old school, vintage vibe encompassing the dirt road hillside in which it resides. They have been serving the foothills community and Red Rock’s worldly visitors their cheesy goodness and friendly smiles for 7 years strong.
